If the chicken meat spring backs to its original shape, it’s fresh! Also, make sure that the chicken skin is cream-coloured and the flesh is pink (not blue), juicy and supple.

Get rid of the foul smell by soaking the chicken in citrusy liquid such as lemon juice, lime juice, calamansi lime juice or tamarind juice or even with the water you wash your rice in. Otherwise, coat with wheat flour, then rinse chicken thoroughly!

Pop the meat in the fridge as soon as you’re back from the supermarket.

Always thaw meat in the refrigerator, in the microwave or in cold water. Never thaw meat on the counter.
