Borneo's Special Boiled Dayak Eggplants
A must try-recipe if you’re lucky enough to find these rather unique looking and tasting eggplants.
|2||Dayak eggplants, skinned and thinly sliced|
|3||red onions, thinly sliced|
|3 cloves||garlic, thinly sliced|
|1||red chilli, thinly sliced|
|2 stalks||lemongrass, crushed|
|100 g||smoked fish|
|2 cubes||MAGGI® Ikan Bilis Stock Cube|
- In a pot, pour in a litre of water. Then, add in the Dayak eggplants, red onions, garlic, red chilli, lemongrass, smoked fish and the MAGGI® Ikan Bilis Stock Cube.
- Allow the ingredients to cook and bring them to a boil.
- Lower the heat and let the mixture cook for an additional 10 minutes.
- This eggplant dish goes particularly well with white rice and fried fish.
