Red dates are rich in vitamin c and iron, traditionally used to replenish and nourish “Qi” in our body.
|4||medium, Chinese yellow pear, cored and quartered|
|20 g||Chinese almonds, sliced|
|10||red dates, deseeded|
|1 kg||whole kampung chicken, cleaned|
|3||MAGGI® Chicken Stock Cube|
|1 can||Abalone, sliced|
|6 pieces||fish maw, soaked in hot water until slightly soft|
In a soup pot, add water and the whole chicken. Bring it to a boil before lowering the heat to let it simmer.
Next, skim the liquid and add in the pears, almonds, red dates, chicken cubes and fish maw. Cover and allow it to simmer for 2 hours.
Season soup to taste with salt and add in the abalone slices just before serving. Garnish with spring onions and enjoy the soup while it’s hot. (*Tinned pacific clams, sea asparagus and bamboo fungus can also be added)
