A must try-recipe if you’re lucky enough to find these rather unique looking and tasting eggplants.
2 | Dayak eggplants, skinned and thinly sliced |
3 | red onions, thinly sliced |
3 cloves | garlic, thinly sliced |
1 | red chilli, thinly sliced |
2 stalks | lemongrass, crushed |
100 g | smoked fish |
1 litre | water |
2 cubes | MAGGI® Ikan Bilis Stock Cube |
1. In a pot, pour in a litre of water. Then, add in the Dayak eggplants, red onions, garlic, red chilli, lemongrass, smoked fish and the MAGGI® Ikan Bilis Stock Cube.
2. Allow the ingredients to cook and bring them to a boil.
3. Lower the heat and let the mixture cook for an additional 10 minutes.
4. This eggplant dish goes particularly well with white rice and fried fish.
