A must try-recipe if you’re lucky enough to find these rather unique looking and tasting eggplants.


2Dayak eggplants, skinned and thinly sliced
3red onions, thinly sliced
3 clovesgarlic, thinly sliced
1red chilli, thinly sliced
2 stalkslemongrass, crushed
100 gsmoked fish
1 litrewater
2 cubesMAGGI® Ikan Bilis Stock Cube


1. In a pot, pour in a litre of water. Then, add in the Dayak eggplants, red onions, garlic, red chilli, lemongrass, smoked fish and the MAGGI® Ikan Bilis Stock Cube.

2. Allow the ingredients to cook and bring them to a boil.

3. Lower the heat and let the mixture cook for an additional 10 minutes.

4. This eggplant dish goes particularly well with white rice and fried fish.
