1. Heat oil, stir fry Ingredients A till oil separates and dries up.

2. Add chicken, stir fry chicken till partially cooked.

3. Add Ingredients B, mix all ingredients and cook for 10 – 15 minutes.

4. Add water, let simmer awhile. Pour in remaining ingredients.

5. Simmer till gravy thickens and darkens.

Kitchen Tip: For a healthier version that doesn’t compromise on taste, replace santan with yogurt.
